Bananas Foster Ice Cream

Ice cream base

4 large egg yolks

2/3 cup sugar

1 2/3 cup 2% milk

2/3 cup heavy cream

2 very ripe bananas (black skins)

1 teaspoon pure vanilla extract

1 teaspoon salt

Bananas Foster

1/4 cup butter

1/2 cup brown sugar

1/4 teaspoon cinnamon

2 bananas cut into 1/2 inch halves

1/4 cup bourbon


For base

Whisk eggs yolks together with sugar until pale yellow in color, about 2 minutes. Meanwhile, bring milk and cream to a boil in a medium saucepan. Remove from heat and add a little of the hot mixture to the egg mixture and stir vigorously. Keep adding a little at a time to temper the eggs. Once the mixture is combined pour it back into the saucepan and cook over medium high heat, stirring constantly until the mixture thickens and can coat the back of a spoon, about 3 minutes (do not let it boil).

Pour mixture back into the bowl and set in an ice water bath to cool. Once cooled add half the custard to a blender with the ripe bananas and puree. Return this to the bowl and add the vanilla and salt. Pour this mixture through a fine mesh sieve to make sure there are no bits of cooked egg and set aside.

For bananas foster

Combine butter, brown sugar and cinnamon in a skillet and cook until the sugar dissolves. Add bananas and cook until they are soft, about 2 minutes. Take the pan off the heat and add the bourbon swirling the pan to combine. Tip the pan slightly and light the mixture on fire with a long handled lighter to flambe the bananas. Once the flame goes out allow the mixture to cool slightly.

Once it has cooled, add it to the base and place in the refrigerator to chill for at least 2 hours or overnight.

Finish the ice cream in an ice cream maker by following the manufacturer's directions. Enjoy!

I don't know about you, but I always have overripe bananas in my freezer. Rather than making banana bread yet again, I thought I would try to make a favorite summer time treat with them, ice cream! I also love bananas foster because it tastes amazing and is so simple to make. Don't be scared of setting the mixture on fire. Just remember to take the pan off the heat before you add the bourbon and use a long handled or barbecue lighter so you don't burn your fingers. Once all the alcohol has burned off, the flame will go out and all you will have left is the bourbon flavor. We all know that ice cream isn't the most healthy thing to eat but everyone deserves a treat now and again and this one is definitely worth the extra time on the treadmill.

Ice cream is loaded with calcium. Dairy products are the best sources of calcium in the diet because they don't have much phosphorus which competes with calcium for absorption in the body. Calcium is essential for bone and teeth structure. It acts as an initiator in muscle contractions and neurotransmission. It is important for blood clotting and can be helpful in increasing weight loss by promoting lipolysis (breakdown of fat in the body) and inhibiting lipogenesis (process of converting acetyl-CoA to fatty acids in the body). The bananas make this treat high in potassium which is an electrolyte that is a major intracellular cation (positively charged ion) which contributes to the contractions of smooth, skeletal and cardiac muscles. It also regulates the excitability of nerves and water balance within the body. It decreases Calcium excretion and has been linked to a reduction in blood pressure. So, even though it might have some extra calories, it still does a body good. Enjoy!
